
FOOD AND FARM
Nourishing connections with food and the land it comes from.
We’re growing a small on-site farm to produce many of the herbs and vegetables used in our menu and our signature tea blends. We practice small-scale farming methods that focus on re- generating the health of our soil.
For what we can’t produce ourselves, we prioritize sourcing from our network of local farms who are focused on improving the local land in our community and carrying on centuries of growing traditions. For anything we can’t source locally, we seek out quality and nature-focussed supplier elsewhere.
Our one-acre farm is fed by water from the nearby Sangre de Cristo mountains. The water reaches us through the local rivers and an ancient set of irrigation canals known as acequias. In Taos, it’s often said that water is life and this irrigation system provides us with both food and our property’s green oasis within our high desert region.
In addition to the farm, our 2-acre grounds are also home to a small herd of horses. Guests may informally visit the horses or add on an equine-assisted experience to their stay.
Maravilla is an active member of a thriving agricultural community across Northern New Mexico. We’ve hosted local groups learning about composting and other farming techniques and are constantly learning from our community about new approaches that work in our unique region. Our indigenous neighbors have been producing their livelihood from this area’s soils and water for thousands of years and we’re honored to be learning from these traditions.
